Mutton 1 kg
Rice 1 kg
Yogurt 1 cup
Hot Milk 1 cup
Clarified Butter 1 cup
Onions (chopped) 4
Cloves 4
Lemons 6
Green Chilies 6
Black Peppercorns 8
Small Cardamom 8
Mint Leaves (chopped) 1 bunch
Yellow Food Color a pinch
Caraway Seeds 1 tsp
White Vinegar 1 tbsp
Red Chili Powder 1 tbsp
Papaya Paste 2 tbsp
Ginger Garlic Paste 1 ½ tbsp
Salt to taste
In a pan, take 1 kg oil and add in 2 tbsp raw papaya paste, 1 tbso red chili powder, 1 ½ tbsp ginger garlic paste, 4 lemons, small cardamom, mint leaves, 4 green chilies, 8 black pepper and cloves mix it and marinate mutton in it for ½ an hour. Cook it on a low flame till the water dries. heat some oil in th separate pan and add in chopped onion and golden fry it. Take it out and let it dry. Add that hot oil in the meat. In a pan, boil 1kg oil, mint, 3 green chilies, small cardamom, 1 tsp black cumin, salt and 1 tsp white vinegar. Boil it. Drain the water. Grease the pan and layer the rice in the bottom that add in meat mixture and spread it add in the crushed fried onion. Then layer the remaining rice add some lemon juice. Add in hot milk, food color, remaining crushed onion, 1tsp clarified butter. Simmer it for 5-10 minutes on a low flame. Serve it with achar.
