Muslims all over the world are celebrating Eidul Azha this weekend. Every household has its own Eid traditions in Pakistan. Those of us who live away from Pakistan try to continue those traditions to ensure our kids stay connected to our culture. Eidul Azha, or Bari Eid as it is called in Pakistan, is centred around food and family.
Ingredients
- Mutton Trotters 12
- Chopped green coriander 1 bunch
- Yogurt 1 cup
- Small onions 2
- Lemons 3
- Chopped green chilies 4
- Turmeric 1 tsp
- All spice powder 1 tsp
- Roasted cumin powder 1 tsp
- Red chili powder 1 tbsp
- Ginger garlic paste 1 tbsp
- Coriander powder 2 tbsp
- Oil as required
- Chopped ginger as required
- Salt to taste
- To Wash Trotters:
- Flour ½ cup
- To Cook Trotters:
- Garlic 2 cloves
- Water 4-5 glass
- Fennel Seeds 1 tsp
- Coriander seeds 1 tbsp
- Salt to taste
Method
- Put ½ cup flour n the mutton trotters and keep it for ½ an hour.
- Then wash it with hot water.
- Add the mutton trotters in the pan, along with 4-5 glasses, 1 tsp fennel seeds
- Add 1 tbsp coriander seeds, 2 garlic cloves and salt. When they are cooked, take out the big
- bones and separate the prepared stock.
- In a pan, add in some oil, add in chopped onion and fry them till they are golden brown.
- Take the fried onion out on a tissue paper to make it more crisp.
- Crush the onion and add it in 1 cup yogurt.
- Also add in 1 tbsp ginger garlic paste, 2 tbsp coriander powder
- Add 1 tsp roasted cumin powder, 1 tbsp red chili and put it back in the pan.
- Cook it for 5-8 minutes.
- Add in the stock and 1 tsp all spice powder.
- Cook it on a low flame. When the oil comes up, add in all spice powder
- Add 3 lemon juice, 4 chopped green chilies, 1 bunh green coriander and some ginger. Simmer it and serve.
